Created by Fleming's Director of Wine Maeve Pesquera, the Sweet Charity cocktail is elegant and floral combining Lillet Rose infused wine, St. Germain Elderflower Liqueur and soda water, served over ice in a wine glass with a raspberry garnish.
Executive Chef Russell Skall - The Master of the Menu
As Fleming's Corporate Executive Chef, Russell Skall has set a new standard of culinary excellence for the American steakhouse. Russell oversees menu development, continually creating fresh, inventive dishes for Fleming's; collaborates with all Fleming's Chef Partners; supervises the purchase of the highest quality ingredients; and works closely with Fleming's Director of Wine, Maeve Pesquera, to pair his culinary creations with our list of world-class wines.
Recommended Food and Wine Pairings
When it comes to matching food and wine, there are no hard and fast rules. Mirroring flavors seems to be more foolproof than going against flavors and textures, yet a citrusy, bright Sauvignon Blanc juxtaposed with béarnaise sauce is an example of "going against" and makes for a refreshing pairing. Most prefer flavors and textures that echo each other. Whatever your preference, it's a good idea to match the intensity of the wine with the intensity or weight of the food.
A big, tannic Cabernet Sauvignon is perfect with a richly marbled steak, such as a bone-in ribeye, but would overwhelm a grilled Pork Chop. Tuna Mignon with its intensely flavored peppercorn crust would make this Cabernet appear even more tannic, while a mellower, less tannic Merlot would soothe it. The best advice of all is simply to experiment - the more often, the better.
